Happy Hour!!!

This week was one of those weeks when I didn't realize how stressed out I was until it was over and now I feel this tremendous need to get some release.  I'm celebrating a major milestone on big project I've been working on for the last year with a pitcher of watermelon martinis!  ... and then when the kids are finally asleep... well... ;)

Watermelon Lemonade Martinis

4 lb. of watermelon
16 oz. of lemonade
vodka
ice

1. Cut watermelon flesh from the rind and into chunks.
2. Puree watermelon in blender until smooth.
3. Use a fine mesh sieve and strain watermelon juice into a large glass pitcher.
4. Add lemonade to pitcher and stir.
At this point, you can serve the watermelon lemonade to the kids in glasses filled with ice.
5. Fill a glass with ice.
6. Add a shot of vodka to ice.
7. Fill glass to top with watermelon lemonade.

Enjoy! :)

  12. Doesn't the hubby know that if you are tipsy your activities later will be... more creative?

Those drinks look amazing. Very dangerous. So tasty you don't pay attention to how much alcohol you have consumed.

    Congrats with your project!

  17. Thanks for the congrats, everyone! I feel such a relief that I finally made it to this milestone!

Definitely try the watermelon lemonade martinis! So yummy. With or without the alcohol. Mmmm! :)

Jill :: My big project is a renovation/addition to our house that has been in the planning stage for what feels like forever. And I exaggerate NONE when I say MY project since my husband is leaving the whole thing up to me. Which is great because I have a lot of freedom to make decisions (with financial limitations, of course), but also very stressful because it is all very overwhelming.

  20. Thanks, Jill! I'm very excited! :D
We really need the space. We took my husband's dad in with us over a year ago and we are living in pretty tight quarters right now. Currently we have three bedrooms each about 8x10 (no such thing as a master bedroom), one bathroom, a living room, dining room and a non-eat in kitchen. I can't wait to have some breathing room! :)
